Bodegas Baigorri
In Wineries Baigorri the gravity is the beginning on the one that turns the whole process of production. Neither bombs nor any other type of machinery are in use in his underground zone of production, to 32 meters of depth, and the selection of grapes is done of exclusively manual form.
The Winery, an innovative and emblematic building in the Rioja Alavesa, is raised in the landscape of careful and respectful form. A great box of crystal, empty to emphasize the environment, emerges of the land as a milestone that receives the visitor showing the vineyards that him make a detour in all his brilliance.

Baigorri Reserva
RIOJA qualified Designation of Origin
Selecting hand, grain by grain and vibrating sorting tables. Stemmed grapes crushed. Long maceration and controlled temperature control using stainless steel tanks with submerged cap. Pumping natural gravity for better extraction. The pressing is done with pneumatic presses and vertical press, making then malolactic fermentation in new French oak barrels. Used at specific moments hot and cold rooms for help both in the process of malolactic fermentation and the stabilization of wine. Phase lasts 18 months aging in new barrels French oak and the remainder in the bottle.

RIOJA qualified Designation of Origin
Made from Viura variety grapes, stemmed grapes and hand-selected, grain by grain, using sorting tables and vibration. On fermentation and aging in French oak barrels, together with its lees for 8 months batanándose regularly. The wood specific toasted to enjoy this great wine without waiting a long barrel aging, avoiding as far as possible oxidation.

RIOJA qualified Designation of Origin
Made from grapes from Tempranillo and Garnacha, and stemmed grapes hand-selected, grain by grain, using sorting tables and vibration. It is a young wine with a low temperature fermentation in stainless steel tanks, together with its lees. After clarification and filtration process, avoiding as far as possible its oxidation, is bottled in February.

Made with tips from Tempranillo grapes. All the grapes were hand picked, bunch by bunch, using sorting tables and vibration. Long periods of soaking the beans with hat submerged, gives this wine a strong personality, making it different from the wines of its kind. Fermentation takes place in oak vats and stainless steel.

RIOJA qualified Designation of Origin
Made from Tempranillo grapes and small proportions of other indigenous grapes, stemmed and hand selected, bunch by bunch, using sorting tables and vibration. Maceration in stainless steel tanks with temperature control and long intracellular fermentation. Aged in French oak barrels, American and Russian Caucasus cupageándose before putting them in the bottle. The aging phase lasts for 14 months in new barrels and the rest in the bottle.

Elaborado con viñas muy viejas de escasa producción. Uvas de la variedad Tempranito seleccionadas a mano, grano a grano, utilizando mesas de selección y vibración. El esmeradísimo proceso de elaboración hace que la producción de este vino sea limitada, dependiendo de la añada, convirtiéndose en uno de los vinos exclusivos de la Bodega. Fermentación alcohólica con largas maceraciones en tinos de madera que permiten extraer todos los aromas primarios de la uva. Fermentación maloláctica de los vinos junto con sus lías en barricas nuevas de roble francés que son controladas por el personal propio de laboratorio obteniéndose una estabilización casi natural.
