Candio 2010
This wine takes its name from the ravine that runs through our vineyards. Whenever attends a year in any of our plots behaves exceptionally, select the fruit of their vines to get a unique wine. Candio 2008 in his first vintage, our plot is from The Plum. Located 500 meters above sea level and facing north, consists of strains of Black Listán about eighty years old, grown rootstock and under the peculiar system of conducting multiple braided cord. After de-stemming and crushing of the grape maceration proceeded to open in French oak barrels, with 75% of the scrape, followed by alcoholic fermentation with indigenous yeasts to a temperature of 31C °. After a maceration of thirty days by daily manual punching down the wine descubó to French oak barrels (60% Allier, Vosges 40%), where malolactic fermentation was completed. The process culminates with a sixteen-month aging in contact with its own lees, to finally being bottled unfiltered, staying for at least six months in bottle before going to market.

The nose nose and great personality complex, aromas of black fruits (blueberries), spicy, mineral on deep background that blends elegance with excellent intensity.

The palate has character, race and youth, an acidity that gives freshness, balance and harmony is tasty, meaty, dense, with a mineral character housing.
