The project of creation of a name of singular origin arises in 2003 with the initiative of 8 warehouses castellanomanchegas that, along his history, have demonstrated the potential of the viticulture of the zone and his enormous aptitude to create wines of high quality. A wine history, an area of special qualities, a few climatic suitable conditions, and the precedents of these 8 warehouses with a long experience in the culture of the grapevine in these lands, as well as of the treatment of his fruit in the press, have stimulated the creation and development of the D.O. Uclés, which protects, only, stained wines of confirmed quality and sensory exceptional profile. D.O. Uclés was born, therefore, with the best expectations of future and with the aim to show to the world his wine potential. Since this way he retires in the D.O.C.M. of May 9, 2005, according to Order of 22-04-2005 of the Council of Agriculture, by which there are established the Procedure of Production of the wines of the name of origin Uclés, and his later modification according to order 01-02-2006 published On February 28, 2006. Containing all the elements demanded by the Law 8/2003, of the Vineyard and the Wine of Castile La Mancha.

Climate

Types of wine

  • young Wines. They Are wines that have acquired a harmony in the set of his qualities organolépticas and an aromatic wealth adapted after the production, without need of aging.The maceration of the must in presence of the husks will have a minimal duration of four days.   • Wine from upbringing. The maceration of the must in presence of the husks will have a minimal duration of 7 days.The period of aging will take place during a term not lower than two natural years counted from the vintage, of which, at least six months, they will have to remain in casks of oak of 330 liters of maximum capacity, finishing his aging in bottle.
  • Reservation Wine.
