Modest project and relative formed by the marriage of Antonio and Conchi.
- Small plot 4 Hectares of vineyard and 3 of Pinegrove and grove of evergreen oaks.
- 100 % in ecological culture.
- Easy to control and therefore of supporting the quality every year.
- Low productions (this year less 1 Kg for vine-stock) to facilitate that the grapes are healthy without need of treatments.
- Approximate altitude of 800 meters influenced by the airs of the Mediterranean.
- The electrification of the Winery is by means of solar panels and a windmill, for what we are self-sufficient and use Energies that do not harm the environment.
- The formation of the vineyard: it is a formation in glass traditional but raised to favor the ventilation and an ideal sunstroke But without the exhibition of the clusters to the Sun and this way to avoid oxidations and losses of aromas of the same ones.
- Subscribers with natural manure and this year we have incorporated humus of worm.
- Very intense frame of plantation (more than 3300 vine-stocks / hectare) to produce less Kg for vine-stock, to create more competition between them and to obtain more quality in the grapes.
- In May we realize a pruning in green (1 ª selection of grapes) leaving in the vine-stocks the brotaciones that are interested.
- At the end of July we realize the vintage in green (2 ª selection), in that we remove in this case the grapes that are not interested (Unripe grapes, or that are not in good condition) to obtain a homogeneous ripeness.
- During the final Vintage (3 ª Selection), we gather manually in boxes of 12-14 Kg, leaving in the field those grapes that not help to obtain this homogeneous quality for that we look.
- Certainly we calculate accurately the ideal moment of the vintage, something that we can obtain also for our small volume. This year we begin On August 17 with the Merlot and end four weeks later with the Petit Verdot.
- The composition of our land is of sands pebbles and clays, characteristics of the zone, intermingling the vineyards between cores
Of pines and oaks.
- We claim that our wine is only, that it differs and that at the same time it supports his personality for everything argued previously and for the characteristic of the assembly of the varieties: Other wines, other Wineries fulfil the cupages in Winery using the proportions of a variety or other one depending on the body, structure, acidity, ripeness ... we have done it in field, using quantities and varieties that according to his qualities and characteristics, and cultivated in the proportion that we have considered opportune, will contribute us to the wine what we wish. This wine is an assembly of 6 varieties (Cabernet Sauvignon, Cabernet Franc, Syrha, Merlot, Petit Verdot and ours
Autochthonous variety that is the Bobal.)
- The production of the wine has been done of a natural form, without the addition of selected yeasts, fermenting with the own ones of our grapes.
- The Wineries of fermentation, during the same one 6500 do not overcome Kg of capacity. They have double shirt of refrigeration to be able to control the temperature too.
- In end, with the technical and technological precise means to obtain a healthy, natural product and certainly of quality.
- The wine does not surrender to any process of clarification and stabilization that is not natural.
- The ripeness and we realize upbringing in casks of 225 lts of French and American oak, though our trend is of working exclusively
With Frenchman. This wine has an upbringing of two months but from the near one add we will take upbringing of 6 months as a minimum.
