The D.O. Manchuela understands a wide territory corresponding to 44 municipalities of the south-east of the province of Cuenca and to 26 municipalities of the North-East of the province of Albacete, placed between the rivers Júcar and Cabriel. Placed in the skirts of the saws that separate the provinces of Cuenca and Albacete of the neighbor Comunidad Valenciana, his landscape, of marked agrarian character, he presents the soft orographical one, in contrast with the interminable of La Mancha plain, of wavy profile, which meets sharply disturbed by the sickles of the rivers Júcar and Cabriel.

Climate

The climate is continental, dry and of marked thermal contrasts throughout the year, though it receives certain emollient influence of The Levant. This way in the maturity cycles of the grape, the combination of the hot winds of west and the freshness and dampness of the Mediterranean breeze favors the formation of the matter colouring of the grapes, doing of this region a wine-growing zone very adapted for the culture of the stained varieties. On the other hand, the almost total absence of rains between May and September, and the great quantity of hours of the Sun during the ripeness they do that the risk of diseases criptogámicas is very low.

Stained Varieties

Authorized: Bobal, Cabernet Sauvignon, Cencibel (or Tempranillo), Robe, Merlot, Monastrell, sweet Moravia and Syrah.

Authorized: Albillo, Chardonnay, Macabeo (or Viura), Sauvignon Blanc and Verdejo

Types of wine

  • White Wine. Slight maceration in cold of the must and desfangado static. Fermentation to temperature controlled (R 18 ºC) in warehouses of stainless steel.
  • Pink Wine. Obtained from a minimum of 85% of grapes of stained varieties. Maceration during a period understood between 4 and 12 hours to a minor temperature of 24 ºC. Static Desfangado of the must and slow fermentation during a minimum of 5 days to controlled minor temperature of 18 oC.
  • Stained Young Wine. Despalillado and squeezed of grapes exclusively of stained varieties. Maceration of the must in presence of the husks for 48 hours as minimum, to a controlled minor temperature of 28 ºC, up to completing the extraction of polyphenols and aromas.Descubado and pressing, continuing the fermentation without husks to temperature controlled (not Superior to 25 ºC).
  • White Fermentado Wine in Cask. Process similar to the previous one except because the fermentation is realized, total or partially (at least, in 75%), in casks of oak.
  • Stained Wine Fermented in Cask. Process similar to the previous one, except because the fermentation, from the descube, realizes total or partially (at least, in 75%) in casks of oak.
  • Stained Wine Carbonic Maceration. Encubado of the entire grapes, without breaking, remaining in a rich environment in CO2 while the fermentation takes place intracelular. Later, well despalillado, squeezed and maceration, or direct pressing, continuing the alcoholic fermentation to controlled low or equal temperature to 25 ºC.
  • Stained Wine of Upbringing, Reservation and Great Reservation. Obtained from stained grapes selected of good ripeness. Maceration in presence of the husks to controlled not superior temperature to 32 ºC, extending during the necessary time to obtain a good concentration of polyphenolic matters and aromas that assure a positive evolution of the wine during the aging, process that will take place in the packings and during the minimal periods legally established.
