Finca Sandoval, S.A.

Founded in 1998

Finca Sandoval is the personal project, initiated in 1998, of Víctor de la Serna, journalist and chronicler specialized in gastronomy and wine. His base is in his own vineyards of syrah, placed in the heart of the Manchuela conquense. They were planted according to an idea, formed throughout 30 years of knowledge of the terruño of the zone: what this one has an enormous potential for the qualit wines, and more specifically for the guard's stained wines, and that - for the characteristics of soil and climate - the syrah was a caste that had to give there proved very interesting.

The small winery (capacity of production for 80.000 liters and of upbringing with a park of 200 Allier's casks and Vosges, and some of American oak, which is renewed by thirds every year) elaborates also limited quantities of grape of autochthonous castes (bobal, monastrell, robe dyes, tempranillo) proceeding from old white hawthorns of the zone, some in the highest zones (1.050 meters of altitude) of the D.O.

The vintage is realized manually and in boxes from 12 to 15 kilos. They retire and, then, vinifican and there grow up separately the grapes of the different plots, identified according to four types different from soil. The wines are elaborated of traditional form, following many of the guidelines of the French Rhone, particularly for the fermentation in small wineries (the majority of 5.000 liters), opened and with manual frequent mixing. The fermentation maloléctica is effected entirely in cask. The wine neither filters nor is clarified. The technology used (vertical press of screw) is very basic and, simultaneously, traditionally. The ship of upbringing and bottle racks is climatizada.
