Bodegas Volver (Venta Morales)
Bodegas Volver was founded in 2004 by Jorge Ordoñez and Rafael Cañizares. The winery is located southwest of the city of Salinas and northeast of Pinoso. Pallet Hill is a product from vineyards DO Alicante one of the most known in the wine production in Spain.
Agriculture has been sustained over time, surviving the impressive pests, including those of oidium and phylloxera - this was possible mainly because of its geographical position, combined with its growing field. The dominant variety is MONASTRELL area, thanks to its ability to adapt to cope with extreme weather conditions and low rainfall.
Pallet Hill's vineyards are located between Sierra de Salinas, Sierra and Sierra LÁltet of Sima and grow to a height of 600-750 meters above sea level. Vineyards between 40-75 years old, grown in system "glass" in the wild (almost organic) without risk. The combination of the terrain and the altitude difference that this small area has established a microclimate, predominantly continental, but with Mediterranean influences. Winters are cold, with snow on the highest peaks. Winter temperatures can reach between 7 and 24 ° C. The summers are hot and dry during the day, temperatures can reach up to 46 º. The average amount of rainfall is 150 mm / mc per year, representing one third compared to the Rioja region. All these conditions result in acidity and sugar content balanced.

Pequeñas parcelas de viñedos entre 40 y 75 años de edad con rendimientos muy bajos, todos ellos dispersos a través de la Sierra de la Sima en el corazón de Alicante. Cultivados en sistema "vaso" en condiciones naturales ( casi orgánicas), sin riego. La combinación de estas características del terreno y la diferencia de altitud que tiene esta pequeña área establecen un microclima predominantemente continental, con influencias mediterránea con altas variaciones térmicas entre el día y la noche. Todas estas condiciones resultan en una acidez y un contenido de azúcar equilibrados.Tiene un reposo de 14 meses en barricas de roble francés.
