The must, obtained by grinding without any pressure, leaving decant for 18 hours, fermented at 20 ° C temperature. Este Pata Negra Reserva se obtiene de uvas seleccionadas. Se fermenta a temperatura controlada en torno a los 25 - 30º C., teniendo una maceración con los hollejos en torno a los veinte días, para conseguir la estructura y color propios de un vino cuyo destino es una guarda de cinco años. Tras la fermentación maloláctica se lleva a barricas de roble americano y francés donde permanece durante doce meses. Trascurrido este tiempo es envasado y criado en botella.

Este Pata Negra Crianza se obtiene de uvas seleccionadas. Se fermenta a temperatura controlada en torno a los 25 - 30º C., teniendo una maceración con los hollejos en torno a los veinte días, para conseguir la estructura y color propios de un vino cuyo destino es su crianza en barrica. Tras la fermentación maloláctica se lleva a barricas de roble francés donde permanece durante 6 meses. Trascurrido este tiempo es envasado y criado en botella.
