This wine is made from grapes harvested by hand on our farm Looking Arousa, with sand floors and granite. The vineyard is working in the same way our grandparents, rich with clams and mussel shell.

The grapes for this wine come from a selection made from our own vineyards and our growers, all located in the Val do Salnés and linked to our production as directed by our technical department for the care of the vineyard. The grapes, harvested by hand also come into cellar and are again chosen at the selection table. From there, it starts the process of maceration in cold (8-10 degrees C), lasting four to six hours. Then the grapes are passed to the wine press, with moderate pressure giving the run juice (the most aromatic musts), with which this wine is made. After the fermentation will racking at a controlled temperature, takes place in stainless steel tanks.

This wine is made from selected grapes from our vineyards and our growers. All are harvested by hand, to then join the pneumatic presses. Thanks to light pressing obtain a high quality juice because the juice extracted without damaging the skin and seeds of grapes. After racking gravity at 36 hours of fermentation begins pressing, which takes place in stainless steel containers at a controlled temperature between 16 and 18 degrees. No malolactic fermentation takes place.

This wine is made from grapes selected for our growers, whose vines have an average of 25 years. The winemaker Enrique Pineiro works with about 30 small growers in the subzone of the "Val do Salnés" with areas less than one acre. All grapes are harvested by hand in small boxes for later delivery at the winery. After a stint in the selection table, complete clusters are introduced into pneumatic presses to get the juice then by a gentle pressure on the grapes. The racking gravity is between 24 and 36 hours after pressing. Then begins the process of fermentation in stainless steel tanks and a temperature controlled between 16 and 18 degrees. No malolactic fermentation takes place.
