DO ARABAKO TXAKOLINA

The Cantabrian region Alavesa, with the Town halls of Amurrio, Ayala, Artziniega, Llodio and Okondo, constitutes the geographical frame where there cultivates the grapevines of the autochthonous variety Hondarribi Zuri with which the Txakoli of Alava is elaborated. It is a young wine of yellow color straw, brilliant with intense fruit-bearing own aromas of his variety, balanced acidity and marked personality. His step along mouth is soft and light. His characteristics make it very adapted to accompany seafood, fished, white meats, cheeses, etc.

Types of wine

For the production of wines that are commercialized by the name of the only variety, alone will be able to be in use grapes of the varieties qualified like recommended, must be in use one of the above mentioned varieties in a minimum of 85 %.
The production of pink wines will be effected by a minimum of 50% of the stained variety recommended in this Regulation.
The txakolis commercialized with the indication " Fermented in Cask " there will must be realized his fermentation and transformation must - wine in casks of oak with a maximum capacity of 350 liters.
Fondillón. There will be applied this indication, sole right of the D.O. Alicante, to the wines elaborated with grapes of the variety Monastrell, sobremaduradas in the vine-stock and with exceptional conditions of quality and health. In the fermentation autochthonous yeasts will be in use only and the alcoholic acquired wealth will have to be, in its entirety, natural. The process of upbringing will have to adjust to the following ones normas:
1. Barrels of oak and own systems of upbringing of the zone
2. minimal Duration of ten years, according to the system of upbringing, without in no case the last wine used to refill has menos de four years
3. Muscatel of Alicante. The utilization of the name " Muscatel of Alicante " remains reserved only for the sweet wines and of Liquor Muscatel, elaborated from grapes of the variety Muscatel of Alexandria
