Inside the Zone of Production there is distinguished the Subfield of Top Quality, constituted by areas delimited and selected by his special qualities edafológicas: they are the dishcloths of the Saw of Montilla and of The Moriles Altos. The maximum productions for hectare remain concentrated in due form on 80 hectoliters on the Zone of Production and 60 hectoliters on the Subfield of Top Quality.

Semicontinental Mediterranean, with hot, long and dry summers and short winters. Temperature mímima average: 12,2 centigrade degrees. Maximum average temperature: 25,7 centigrade degrees. Number of hours of the effective Sun: Between 2.800 and 3.000 annual ones. Pluviometry: Between 501 and 998 mm. (Zones of upbringing).

Types of wine

  • Generous Wine Fine With Upbringing. pale Wine, of straw, dry, slightly bitterish, light and flagrant color to the palate, and of alcoholic acquired graduation understood between 14 and 17,5 degrees.
  • Generous Amontillado Wine With Upbringing. Dry wine, of sharp nutbrown, soft and full aroma to the palate, of color amber or old gold, with alcoholic acquired graduation understood between 16 and 22º.
  • Generous Fragrant Wine With Upbringing. Wine with very much body, fully and velvet, aromaticly, energetically, dry or slightly doomed, from color similar to that of the mahogany, with alcoholic acquired graduation normally understood between 16 and 18º, though the very old ones can reach 20º.
  • Generous Wine Cut With Upbringing Palo. Wine that shares the characteristics of the Amontillado one as for aroma and of the Fragrant one as for his flavor and color, with alcoholic acquired graduation from 16-18º.
  • Generous Wine With Upbringing Raya. Wine with similar characteristics to the Fragrant one but from fewer palate and aroma.
  • Generous Wine Without Upbringing Ruedos. dry and light, generally pale Wine not submitted to upbringing and with an alcoholic acquired minimal graduation of 14º. In order that this wine could be commercialized under the D.O. his mixture is necessary with wines of upbringing protected by the D.O., with a minimal proportion of 10% of these and in a way that he reminds the Regulatory Advice.
  • Pedro Ximénez Wine.Sweet natural wine, of color dark ruby obtained from must of sunny grape of the variety "Pedro Ximénez" of wealth in azúcares Superior to 272 g/l, and that surrenders to alcoholic partial fermentation.
