Parés Baltà Calcari
The grapes xarel.lo which is made with white Calcari come from the Finca Parés Baltà, located at 254 meters high, with calcareous soils and clay loam. All of the winery farms organically grown: the fertilizer is obtained from a flock of sheep and pollination own, thanks to the action of the bees from the hives relatives. After harvesting and selection of grains, maceration is performed for four hours. After the grapes are pressed and fermented at 16 °, for three weeks. The Calcari has aged for four months in stainless steel tanks on lees and bâtonnage daily.
