Opera Prima Tempranillo
In order to develop a very fresh young wine we adapt the vintage date of the characteristics best suited to the development of a young wine, when in our strains are the ideal acidity and sugar. Before you start the alcoholic fermentation of grapes held at 10 ° C. for 48 hours to extract, in the absence of alcohol, terpene components producing the characteristic aromas of this variety (red and black fruits and licorice forest) and the anthocyanins responsible for the colors blue and deep reds. At the start of alcoholic fermentation, the temperature was maintained below 25 ° C. in order to preserve the aromatic potential previously extracted. Once two thirds fermented sugar proceeded to racking, wine cooling the wort to 20 º C. (Stabilization) to conclude the alcoholic fermentation in stainless steel tanks.
