Consigna Shiraz
This wine is a pure varietal Shiraz, variety of French origin that is used in the great wines of the Rhône Valley. It has adapted well to the geographical area of ??Tierra de Castilla, which is leading to a major increase of plantations, currently exceeding 30,000 hectares. The Shiraz is the beneficiary in an extreme continental climate with cold winters and hot summers, with limestone-clay soils, at an altitude of 700 meters and a low rainfall of 600 mm with maximum and minimum annual 300. Harvesting is done after a thorough ripening control to achieve a balance of sugars, acids and phenolic maturity. Initially, there was a cold soak for 3 to 4 days, just before fermentation at a temperature that in no case exceeded 25 ° C. The process lasts 6 to 8 days, in order to provide some structure to this setpoint, to be consumed in all respects as young wine.
