Mayo Casanova
Winery located in the historic center of the low Vilafamés in an old house built in the early XX S. The grape comes into this small winery where processes are performed in a traditional but simpler and controlled. Make their products from two different vinification processes.
White vinification: the grapes are transported to the hopper, thus obtaining quickly and smoothly with the juice that is channeled by gravity isothermal tanks in which performs static settling. Then extracted the clean side of the wort and let the wild yeast fermentation start, through which transform the sugars in the wort into alcohol and so will I get the wine.
Red winemaking: at the entrance of the grapes are removed quickly scrape. The remainder of the paste (must and skins) is channeled directly to the fermentation tank, where the juice back, using the generation of CO2 which is produced during fermentation, in order to go bathing the skin and thus obtain a maceration homogeneous.
The allowed maceration extract maximum color and aroma, once achieved, separate wine and the skins and pressed. Then takes the wine barrels and wine fermentation last to go through the aging room.
