Emilio Lustau S.A. was founded in 1896 by Don Jose Ruiz-Berdejo. In 1940, his son-in-law Don Emilio Lustau Ortega moved the winery to the former neighborhood of Santiago, in the old town of Jerez. There, in the buildings that were forming a part of the historical Arabic walls of the city, it was extending the business slowly, still as wineryman. From 1950 till now, the signature is an exporter of wines of Sherry.

In the decade of ' 70 the company continued his expansion. First, constructing new ships of winery in the familiar estate of Our Lady of the Hope. Later, from beginning of ' 80 and under Rafael Balao's direction, it turned into one of the most innovative companies of Sherry.

The range Lustau Solera Reserves it was created departing from Lustau's stock from his beginning as wineryman. Them there joined a selection of winerymen's, consisting sherries of very special wines of small butlers, to be offered to select clients. These wines constitute some of the best sherries of the zone.

In 1988 Lustau it gave one more step in the innovation introducing a new design of bottle for his wines. The elegant dark bottle with slipped shoulders is a sole right of the company, differentiating Lustau of other wineries of the frame and granting him the image of high quality of the wines that it contains.

In 1990 Emilio Lustau's destination S.A. changed when went on to hands of the known company Luis Caballero S.A., producer of liquors and spirits and of the famous Punch Gentleman, the liquor most sold of Spain. This one gave Emilio Lustau considerably and sure financial support and the possibility of development and expansion.

In June, 2001 the company acquired six wine-producing buildings that concerned to the company Domecq with a total of 20.000 square meters, buildings that were been restored along 2001 and 2002 and that shelter today all the wine-producing facilities of our company, head-board of the group Gentleman in the world of the sherry.

In June, 2008 Lustau Botaina acquired four of the most solitary brands in the history of the wine of Sherry, La Ina, Botaina, Río Viejo and Viña 25. The purchase understood not only the brands but also his solerajes, totalizing 4.000 boots of wine of sherry that continue being aged and supported in agreement to the traditional systems of upbringing of the "sherry".

In spite of this logical evolution the philosophy of the company continues being the same, to look for the major quality in his wines and to offer to the market the most wide range of sherries. It is our challenge of future and the one that it has allowed us to evolve from the past.

San Emilio is made solenado Pedro Ximenez white grape until pasifica, his wine, and a very high density and a high sugar concentration, partially fermented and then fortify with the best spirits and aging it in barrels.
