Bodega Díaz Bayo (Díaz Bayo Hermanos)
The family Díaz Bayo has devoted himself, during more than ten generations to the culture of the vineyard and to the production of wine in the Bank of the Douro. Until 40 years ago the production was realized in presses of stone where the grape was settling for his trodden and pressed later one, the resultant broth was removing to vats of wood placed in underground warehouses where, to a constant temperature the wine was acquiring the own character of the zone. About 1960 there are selected the vine-stocks that were producing better grape and with them new plantations of vineyard are done.
The current project consists of taking to the bottle the great potential of our vineyards, trying that the terruño and the variety show his potential. For it, the totality of the grape comes from our vineyards, certificates in ecologically and with directives biodinámicas. All the wines are elaborated by his own yeast, and the level of sulfitos added is the indispensable minimum for his conservation; we have top methods, but all of them are carried out in a very traditional way (unifying tradition and innovation). Delastage, pneumatic vertical pressing, upbringing on you tie with batonage, maloláctica in cask ... they do that the wines are expressive and incomparable, but especially, take behind the stamp of the family and the terruño.
With this project we want to show to the lovers of the wine, the knowledge and the good one to do acquired during more than 10 generations in whom the family has devoted itself to the viticulture and the production of wines in Fuentelcésped. Walking our broths all over the world proudly, forming a tandem with those clients, ó rather, collaborators, who sit down part of the project, and undoubtedly reaching a success of form it combines.
All that, based on respectful methods of work with the environment and totally sustainable not to compromise the future of the future, and like that generations, our corks come from forests with certificate FSC, we use boxes with minor contained of carton, and avoid the pollution of the waters with the absence of fungicides, herbicides and artificial manures.
