Castillo Perelada Cava Gran Claustro Cuvée Especial Gran Reserva
When U.S. President Dwight Eisenhower visited Spain in 1959, Castillo Perelada was commissioned to select a champagne reception banquet, choosing a small reserve of its own. The resounding success of that election the Great Cloister. A champagne made by craftsmen and raised in the cellars of the monastery which stands next to the Castle Perelada, the same where the Carmelite monks produced wine and more than six centuries. Born in a historical time and place, the Great Cloister is now an international reference cava. This sparkling wine produced using the traditional method has created its own identity over the decades due to factors such as the use of indigenous grapes or the mild climate of growing area. Cava The term comes from the word used to describe the caves where it is made traditionally. Fermentation of the must flower under controlled fermentation. 30% Chardonnay wine was fermented in French Allier oak barrels on its lees for four months. Aging: A minimum of 30 months in bottle before disgorging.
