Barón de Chirel
Barón de Chirel emerges in 1986 following an experimental drawing from a selection of grapes from very old vines over 40 years of very low yield and high quality. From the results of this test will be born the precursor of what might be called, new age wines of Rioja. This wine is produced in a very limited way only the great vintages, which express the character of the vineyard, the soil and the variety, delivery of a harmonious whole. From harvest 1995 Riscal manually select grapes for this great wine with the installation of sorting tables or "Trie". Riscal was the first winery to introduce this system in Spain marking a milestone in the development of quality red wines. Make the fermentation at a controlled temperature of 26 ° C and not exceeding maceration 12 days. It malolactic fermentation in wooden vats of 20.000 liters and then aged for 20 months in American oak barrels. It has a period of refinement in the bottle for at least a year before release.

Ideal with ham and cheeses, red meat, poultry, game stews, such as quail, rabbit, venison, wild boar and deer, even seasoned with spicy sauces.
16ºC - 18ºC
Dark cherry color, alive, barely signs of evolution.
High aromatic intensity, which highlights the toast and spices contributed by the French oak with notes of ripe black fruit.
The palate is fresh and creamy, with soft tannins and polished wood which is very little present. Complex and elegant with a long finish and balanced.
