Vineyards and wineries Pablo is a familiar winery placed in municipality of Almonacid de la Sierra, (Saragossa) fitted in the D.O. Cariñena. His wines come supported by the great wine tradition of this family and elaborated with autochthonous varieties principally cultivated in chosen areas, to an altitude between 550 and 750 m. The origin of the winery goes back to the 18th century. Though the wine tradition is previous, it is in 1760 when our predecessors conceive her as business. The great wealth of our winery is the legacy of our forbears: the land and the most suitable clowns for the quality of our wines.
The founder, Antonio Hernández, initiated the production of his grapes and created excavating to hand the underground winery that supposed the genesis of the current winery. In those caves, which still exist today but not dedicated to the one that was his use for a long time, he installed big vats of wood with a capacity of between 5.000 and 6.000 liters. Such they were his dimensions, that the vats had to be constructed in the interior.
The current persons in charge of the winery, Jose Paul Casao and his sisters, construct the definitive one on other one of 1940 acquired in 1995, into that they incorporate the last technologies .El aim is to transmit the expression of the area to his wines, with the grapes of before (without credits, without herbicides, or products of synthesis) and to promote his autochthonous varieties.
