The Cava elaborated in the same way that the champagne, his own identity has been created on the principal international markets during the last thirty years. Factors as the employment of autochthonous grapes, a moderate climate and heterogeneous zones of culture have helped to form his own character. The principal production of the cava places in those of Sant Sadurní's locality d " Anoia, to the south of the province of Barcelona, where the warehouses specialized in his production have produced it with commercial ends from ends of the 19th century. At present, this zone still concentrates 85 % of the whole production. Nevertheless, the area of culture allowed includes 160 municipal areas placed in seven Autonomous Communities, between which Aragon, , Navarra, La Rioja, Extremadura or Valencia are included.

Everage temperature is of 15,5 º C.La pluviometría in The Champagne is 750 mm. Whereas in the D.O. Cava is 500 mm. The hours of sunstroke, in the D.O. Cava registers an average of 3000 hours / year. In D.O. Cava is totally prohibited by the Regulatory Advice to water the vineyards. The hot climate of the D.O. Cava facilitates the ripeness of the grapes and the vintage can start by being before the flavor of the softest Cava offering a sensation of freshness, and it does not have this peculiar acid flavor that characterizes the Champagne.
