In March, 1986 the Department of Agriculture approves the Specific D.O. Wines of Madrid. Finally, in November, 1990 the Name of Origin remains recognized officially Wines of Madrid. Therefore, the wine of Madrid will have to place suitably to reaffirm his site among the best wines of the country and to recover the prestige that they showed times behind.

Types of wine

  • Stained and Pink Wine. Stained Robe and / or Thin Red wine will be elaborated by a minimum of 60 % of the varieties, and the whites, by a minimum of 60 % of the varieties Malvar and / or Albillo. In the production of frothy wines, there will be used the varieties outlined in the fifth paragraph of this article, of which for wine it bases white they will use a minimum of 50 % of Malvar and / or Albillo, and for pink wine this minimum will be of Stained Robe and / or Thin Red wine.
  • White Wine.
  • Frothy Wine. They will have to fulfill the established in the Regulations (CEE) 2332/1992 and 2333/1992, of July 13. The frothy wines will be elaborated from white and pink wine. There will be able to be destined to this production only the varieties of grape Malvar, Alblllo, Torrontés, Viura, Parellada, Robe Dyes and Thin Red wine. The frothy wine, beside assembling the qualities organoléptícas indispensable, will will to have the following characteristics: total Acidity (in tartaric acid) minim: 5 g/l. Volatile acidity (in acetic acid) low to: 0,6 g/l. The process of production will be for, the traditional method. The maximum quantity of saccharose that can be fermented will be 25 g/l of wine base and the process of upbringing up to the degüelle will have to have a minimal duration of nine months.
