Orquestra Cabernet Sauvignon
This wine is a pure varietal Cabernet Sauvignon, a variety of great tradition in Castilla-La Mancha and there are now planted about 6,000 hectares. This French variety benefits from our extreme continental climate with cold winters and hot summers; of their limestone-clay soils, at an altitude of 700 meters, and, finally, a low annual rainfall which is around the 450 mm.La harvest is done after a thorough ripening control to achieve a balance of sugars, acids and phenolic maturity. The development begins with a period of cold maceration that may last 2 to 3 days, followed by fermentation at a controlled temperature not exceeding 25 ° C. Fermentation takes on average between 4 and 6 days, in order to obtain wines with enough structure, but designed for use as a young wine.
