El cultivo manual, la fermentación se realiza en depósitos de acero inoxidable a temperatura controlada de 15ºC, la maduración se hace durante cuatro meses sobre lías; no se realiza fermentación maloláctica, posteriormente se realiza una filtración con tierras diatomeas.
