Barreling and yolk musts bleeding at 12 hours and racking energetic clean wort to ferment at 15 º C. After 4 days of the start of fermentation the must is racked to French oak barrels. Fermentation Once the barrel is left on its lees for 3 months. Later aging on its lees for 2 months which give the feeling appreciated fat mouth.
