In 1970 the grandson of Tomas, Ramon de Ayala, decides to condition and to transform part of the casona into a rustic restaurant where they sell his wines proceeding from the caves placed under the restaurant, Tavern Ayala. During these years the family Ayala decides to commercialize his wines by means of the brand VIÑA SANTURNIA.
