Selección especial de nuestro viñedo viejo de mayor calidad con más de 40 años de edad vendimiados a mano. Maceración prefermentativa en frío durante 4 días Fermentación en depósitos de acero inoxidable a temperatura controlada de 24ºC durante 9 días. Fermentación maloláctica en contacto con sus lías en una selección de 70 barricas bordelesas nuevas de roble francés. Escogiendo aquellas que a través de los años y nuestra experiencia han demostrado aportar elegancia, finura y personalidad por su integración con el vino, verdadero protagonista de todo el conjunto. 16 meses en la misma cuidadosa selección de barricas bordelesas nuevas de roble francés. 8 meses de crianza en botella como mínimo.
